Wellington Wines ‘Duke’ Merlot 2023 Winemaking Grapes, from specially selected vineyards, were picked at optimum ripeness. After de-stalking and crushing, the juice was fermented on the skins at 25°C, until it was dry. Regular pump-overs during fermentation ensured optimal colour extraction. The free-run portion was matured in French oak barrels for 12 months, with malolactic fermentation taking place in the barrels. Tasting Notes Aromas of dark hedgerow fruit, ripe plum, and rich chocolate mingle with layered oak spice. The palate is smooth and mouth-filling with a medley of dark berries enhanced by savory black olive paste. Well-integrated tannins and fresh acidity provide structure and vibrancy, leading to a satisfying, lingering finish highlighted by dark berry flavors.
