The grapes are handpicked, sorted and destemmed before fermentation takes place naturally for approximately 30 days with gentle punching down. All the movement of the wine around the cellar is done by gravity. The wine is naturally clarified by racking from barrel to barrel and then ageing in takes place in old barrels for 24 months. Rebelle takes to the Syrah to its lofty highest when it shows its potential to be one of the world’s finest red grapes. There is depth and richness, complexity, dark fruits, pepper etc but also sublime freshness which doesn’t seem to take away from the body of the wine.
