Buzet Totem Rouge Dom du Pech 2009, biodynamic, Cabernet Sauvignon, Merlot, Cab Franc rich, supple, unique and absolutely gorgeous to drink. The white gravels of the Domaine du Pech in the extreme south of the unknown Buzet appellation have excellent drainage, and the consequent reflection of light and accumulation of heat ensures optimal maturity for the grapes. This is no more evident than in Totem, the wine which is truly emblematic of the domain’s commitment to the natural and the beautiful. Viticulture is ‘en biodynamic’. No fertilizers have been used for twenty years. Since 2000 yields have been significantly reduced and since 2004 the drive towards biodynamic methods of cultivation has included the use of medicinal plants as well as minerals, thereby necessitating minimal treatments with copper or any use of sulphur. Only natural yeasts and bacteria are used, and the wines are bottled without filtration. There is no limitations on commitment and ambition here. Totem 2009 lay dormant, sleeping peacefully for a full 13 years in demi-muid barrels with no added sulphur. Once awakened (by it’s prince Charming, Ludovic Bonnelle) and bottled in 2023, the wine became the stunningly rich and expressive elixir that it is today. At the same time, very full bodied, layered with complexity and so deliciously easy to drink, you can polish it off in half an hour. Considering the time and love taken to make this exceptional wine, it is also an absolute bargain. Drink with anything but especially big blue cheeses or a hearty ‘Civet de Sanglier’. Is Vegan?
