VinificationCrafted in a classic Burgundian style, this wine underwent spontaneous fermentation, with a significant portion of whole-bunch fruit. Punch-downs were kept to a minimum, allowing for a gentle extraction and a softer tannin profile. Maturation took place in 300L French oak barrels for 12 months, with 30% new oak contributing mid-palate weight and length. The remainder was evenly split between second, third, and fourth-fill barrels before a light filtration and bottling. Winemaking & MaturationFermented and matured in seasoned oak barrels, this Chenin Blanc spent 12 months developing depth and character, while retaining purity of fruit. Soil & TerroirSourced from Hemel-en-Aarde Ridge, the highest of the three wards in the valley, the vineyards benefit from cooling Atlantic breezes funneled through the valley. The soils consist of ancient weathered sandstone with younger Bokkeveld shale, enriched with clay—ideal for low-yielding vines that produce small berries with exceptional concentration and depth of flavour. Tasting NoteThe wine opens with bright notes of sour cherry and raspberry, lifted by hints of Campari spice. A fresh line of acidity and subtle earthy undertones bring balance and complexity, resulting in a wine that marries old-world structure with the purity and vibrancy of new-world fruit.
