WINEMAKING NOTESMeticulous care defines the winemaking process. Grapes are hand-sorted and destemmed before being gently protected with dry ice to retain purity. High natural acidity, combined with very low temperatures, allows for an overnight settling of the juice. The clean juice is divided into four fermentation lots, including a small barrel-fermented portion, with lees stirring employed across all batches to enhance palate depth and texture. VINEYARD NOTESSourced from vines classified under the Cape Town Wine of Origin, the fruit is harvested from two distinct sections within the same vineyard block.
